Mari El is rightfully considered one of the most ecologically clean regions of Russia. It is not surprising that the Mari national cuisine is based on the gifts of forests, fields, rivers and lakes.

One of the main national treats of the Mari people is three-layer pancakes with baking koman melna.

This is a kind of layered pie formed from three different pancakes. National Mari pancakes are baked in the oven and served with savory fillings or sauces.

The original dish of Mari cuisine is one of the famous festive treats.

Traditionally, pancakes consist of three layers: the lower one is a pancake made from thinly rolled unleavened rye dough, the middle one is a sour dough made from spring wheat flour, and the upper one is a gruel made from pre-soaked cereals in milk or cream, with the addition of raw eggs.

For the first layer, juicy, hard-boiled unleavened dough is prepared, usually from rye flour, raw eggs and salt. This dough is rolled into a thin cake the size of a frying pan, 1.5-2 mm thick, and baked in a greased frying pan. When a ruddy crust appears, apply a second layer of oat flour diluted in milk (which has not curdled) and sour cream. For the third layer, oatmeal is taken, soaked in sour cream or melted butter for 8-10 hours. The mixture prepared in the form of a slurry is applied over the second layer.

Finely bake until golden brown. After baking, the finished pancake is placed on a plate and greased with melted butter or butter.
